BELIEVE IT OR NOT: This Fried Chicken Meal Could Prevent Blindness

One of the most important consequences of Vitamin A deficiency is dryness of the eyes, which eventually leads to blindness.  In fact, this deficiency has remained one of the leading causes of blindness in the world.  Night blindness is also an eye complication of early Vitamin A deficiency.

Fruits contain a huge store of vitamins and minerals, but sadly Vitamin A is not one of them.  Vitamin A is a fat-soluble vitamin which simply means, for it to be absorbed, their must be some fat in our diet.

According to a published Food Data Chart, one of the richest sources of proVitamin A comes from Fried Liver.  Coming in second is Fried Chicken Liver. Results are based on single servings (130g).

Other food sources you can find Vitamin A include, but are not limited to: butter (salted), cream cheese, cream (from milk), sponge cake, cheesecake, margarine, omelet, quiche, cheese souffle, flaky pastry, liver sausage and chickpeas.

Is There Such A Thing As "Healthy Coffee?"

Every time I ask someone the question: "Would you like a sample of Healthy Coffee?", invariably the response I get is "There's no such thing as healthy coffee".

Well, contrary to popular belief...there IS such a thing as healthy coffee and I will explain why.

The use of coffee and the benefits derived have gone through a metamorphoses of beliefs.  First, it was considered good only as a commercial beverage, then good for weight loss if consumed "black" without milk or sugar, to being bad for our health and disastrous for people with heart disease and high blood pressure.  

Now recent findings have placed the emphasis back on coffee as a healthy drink as it was found to increase memory and energy, speed relief of migraines when taken with migraine medication, reduce blood pressure, decrease blood sugar levels in diabetic patients and prolong the life of those suffering with heart disease.  This is largely due to the many anti-oxidants said to be in coffee.

Scott K. Aberegg, M.D., M.P.H. Pioneer Valley Hospital, Salt Lake City, UT  posted his findings in the New England Journal Of Medicine, stating: "...There is evidence of a protective effect for hepatocellular and endometrial cancer and possibly breast cancer. Other studies have shown some evidence of protection from colorectal cancer..." - more studies need to be conducted for conclusive evidence.

Many of these reported studies still link coffee to mortality, but believe it could be as a result of other actions combined, e.g. smoking.
